What is Nova Terra hard spring wheat flour?
Nova Terra is a hard spring wheat bread flour with 14–15 % protein (laboratory 14.20 %), imported into Ghana by AgroLoaf Ghana Limited and sold in 50 kg bags. The high protein level builds a strong, elastic gluten network, and that network is what holds gas through fermentation and gives the loaf its oven spring and open crumb.
The flour contains no potassium bromate, a synthetic dough conditioner still in use across the region, and is fortified with iron, zinc and folic acid together with thiamin, riboflavin and niacin. It is registered with the Ghana Food and Drugs Authority under FDA/BK 26-1044 and milled to meet the Ghana Standard in full.
Why does consistency matter to a bakery?
Because the specification does not move between shipments, a recipe tuned on one delivery still works on the next. For a bakery running daily volume that is the difference between a written recipe and one re-tuned every time new flour arrives — hydration, mixing time and proof stay where the baker set them.

What is Nova Terra used for?
- Bread, at any batch size: the same specification serves a single-oven artisan bakery and a plant running daily volume, because orders run from 50 bags up to full containers off one stock.
- Pizza dough and crust: the strong gluten network takes the stretch a thin base needs without tearing.
- Rolls and buns: holds shape and crumb structure at small piece weights, so sandwich rolls keep their height.
- Baguette: high protein supports the long fermentation a crisp crust and open crumb are built on.
