Start with the flour, because you cannot fix it later
Bread needs a flour that can build a strong gluten network and hold gas for the length of a proof. General-purpose flour is milled for a different job — cakes, pastry, general cooking — and it simply does not have the protein to do it. No technique compensates for that. If your bread is consistently dense, change the flour before you change anything else.
What you want is a hard spring wheat bread flour: high protein, strong gluten, and consistent from bag to bag so a recipe that worked last month still works today.
Hydration: the change most people are afraid of
Strong flour absorbs more water than weak flour. If you switch to a bread flour and keep your old water quantity, the dough comes out stiff and the loaf comes out tight — and the flour gets blamed for it.
The practical approach:
- Work in percentages: water as a percentage of flour weight, not cups per batch
- Start around 65% and move up in 2–3% steps across several bakes
- Expect the dough to feel wetter and slacker than you are used to at the start of mixing — that is correct
- Use a scale. Volume measurement is the single largest source of variation in home baking
Higher hydration is what produces an open crumb and bread that stays soft into the next day.
Fermentation in a warm climate
Most bread recipes are written for a 20–22°C kitchen. In Accra it is routinely ten degrees warmer, and yeast responds to that by working roughly twice as fast. Follow the clock in the recipe and you over-proof: the dough peaks, the gluten runs out of strength, and the loaf collapses or spreads instead of rising in the oven.
What to do instead:
- Judge the dough, not the timer — look for roughly a 50–75% increase in volume, not a doubling, before shaping
- Use the poke test: a floured finger leaves a dent that springs back slowly when the dough is ready
- Use cooler water to slow things down; ice water in the hottest part of the day is not excessive
- Consider a cold retard — shape the dough, refrigerate it overnight, and bake in the morning. Flavour improves, and the schedule becomes yours instead of the weather's
- Reduce yeast rather than shortening the proof if you want more flavour development
Technique that closes the remaining gap
- Autolyse — mix flour and water, rest 20–40 minutes, then add salt and yeast. Gluten develops on its own, with far less kneading
- Stretch and fold instead of long kneading — three or four sets during the first hour builds strength gently
- Shape with tension. A slack, loosely shaped loaf spreads sideways in the oven; the surface needs to be taut
- Bake hot with steam. A tray of boiling water or a covered pot for the first ten minutes gives you oven spring and a crust that crackles
- Let it cool completely. Cutting a hot loaf ruins the crumb — it is still finishing inside
For professional kitchens working in small batches
Restaurants, hotels, pastry kitchens and culinary schools sit between home baking and industrial production: real standards, but no large-scale equipment. Strong flour matters most here, because there is no dough conditioner or industrial mixer covering the gap.
