Why Choosing the Right Flour Improves Consistency in Every Loaf

Ask a production baker what keeps them awake and it is rarely a single bad day. Gluten strength
Two flours can show similar protein on paper and behave completely differently in the mixer. What matters is how the gluten network holds: whether it stretches under shaping or tears, whether it survives a long mix, whether it springs in the oven.

- Take dough temperature after mixing and adjust water temperature to hit the same figure daily
- Time proofing by dough behaviour, not the clock, and note the ambient temperature
- When you change flour, run a small test batch before committing a full production day
- Keep one written spec sheet per product, and update it when something genuinely improves
